It's time for a new recipe article and what better than puddings for all seasons?

6 oz self raising flour,
4 oz butter or stork
4-6 oz castor sugar
2 eggs beaten
4 tablespoons milk
4 apples peeled and cut into large chunks
1 teaspoon ground cinnamon - optional.
Sprinkle the apples with cinnamon and leave aside.
Preheat oven to 160 degrees.
Grease and line a cake tin - I use a 2 lb loaf tin.
Mix flour and butter until it becomes breadcrumby.
Add sugar and mix well.
Stir in beaten egg and milk, mix well, then gently fold in apples.
Pour into the tin and cook for about one hour, 15 minutes. BUT after 30 mins cover the top with foil so it doesn’t burn.
This cake is lovely warm or cold, on its own, with custard or cream.
